CallReply is not a booking calendar: it sends the reply text and keeps the history. But because the message comes from your own number, the client can reply with the day and time she wants. You then confirm by hand, as you already do. If you use an online booking link, you can add it to your template and keep an eye on length with the preview.
iOS does not let any app read the call log or send a text by itself. On iPhone, simple mode checks your rules, then opens Messages with your text: you tap Send. Automatic mode relies on the Shortcuts app and on your carrier's missed call alert, which sometimes only covers calls received while the phone is off.
Independent hair salons, mobile hairdressers and barbers where the same person cuts, colours and answers the phone. During a forty-minute appointment several calls can come in. Each caller gets a message instead of endless ringing.

Answering a client who just called is not direct marketing. Keep the message informational. A promotion on treatments or products would make it commercial, requiring prior consent and a free opt-out (STOP) under CNIL rules.
Numbers on the STOP list never receive a text: your suppliers, brand reps, family. You can edit it on the phone and on the web.

A client calling from a withheld number cannot receive a text. The call appears in the history, with no reply possible.
